The Junmai Daiginjo of " Gazan" is made from Yamada-Nishiki rice that has been highly polished to 35%.
The 65% of rice is shaved and the surface layer, which is the source of miscellaneous flavors, is polished to create a deep yet
clean taste, and
elegant and gorgeous aroma and distinct rice flavor can be enjoyed.

Dialogue with the Microorganism Yeast

We listen to the silent voice of the yeast and take great care even in
oaring to avoid affecting the quality of the sake under
low-temperature fermentation, which is very difficult to control the temperature.
The delicate, mellow aroma produced by the toji's skill and the ginjo yeast is the charm of Gazan.
